Miso Tahini Pasta with Sautéed Mushrooms



2 garlic cloves or more if you love garlic
1 Lb Pasta
2 T Olive Oil
8 oz. Mushrooms Sliced or quartered
¼ C white miso paste
¼ C Tahini
1 cup chicken stock or pasta water
Freshly ground pepper


  1. Boil large pot of water to cook pasta.
  2. Saute mushrooms in hot skillet. Cook until water has been released and mushrooms are starting to brown.
  3. Add garlic a few minutes before taking them off the heat.
  4. While the pasta and mushrooms cook, mix the miso , tahini and 1 T of oil together until mixed well.
  5. Drain Pasta. Add about ½ a cup of pasta water or chicken stock to the miso/tahini mixture.
  6. Continue to add water until desired consistency is reached.
  7. Pour the miso tahini mixture over pasta and garlic mushrooms.
  8. Season with Black Pepper.
